It is typical of the\u00a0Lazio\u00a0region of\u00a0Italy. The dish took its modern form and name in the middle of the 20th century.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">The cheese is usually\u00a0<em>pecorino romano<\/em>. Some variations use\u00a0Parmesan,\u00a0Grana Padano, or a combination of cheeses. Spaghetti\u00a0is the most common pasta, but\u00a0rigatoni\u00a0or\u00a0bucatini\u00a0are also used. While\u00a0guanciale, a cured pork\u00a0jowl, is traditional, some variations use\u00a0pancetta, and\u00a0lardons\u00a0of smoked\u00a0bacon\u00a0are a common substitute outside Italy.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">There are various hypotheses on the origin of the recipe and, as is often the case in this field, there are no certainties.
